WJHL newsman Josh Smith makes his favorite breakfast food.
Josh’s “Feed the Family Fritatta”
6 eggs (more if you’re hungry)
Enough meat, veggies, or leftovers that go good together to make about 2 cups (if more than 2 cups, you’ll need more eggs)
A dash of milk, half and half, or whipping cream
Salt, pepper to taste
(garlic and cumin won’t hurt)
Preheat oven to 375 degrees.
Beat the eggs and add a little milk – just a little.
In a non-stick skillet with a bit of olive oil, cook or reheat your frittata filling. If raw, cook the veggies to your taste.
Even spread the ingredients across the skillet.
Pour the egg mixture over the cooked ingredients. With a spatula, gently pull the cooked egg to the center of the skillet allowing the uncooked egg to hit the skillet surface.
When all but the very top of the egg mixture is cooked, pop the skillet into the oven. Remove when the egg is full cooked. Top with grated cheese and return to the oven until the cheese is melted.
Remove, cool, and slice like a pizza. Service with sour cream, salsa, cilantro, etc..
This is a Smith family favorite because it’s easy, it’s quick, and it dispenses of lingering leftovers. Oh- and it’s a great way to get your kids to eat things that good for them.
For the filling, we like veggies, beans, and some good chopped bacon!
