Eureka Inn’s Banana Bread
Banana bread recipe:
One stick (1/2 cup) of organic or all natural butter
One cup of organic sugar
2 eggs from free range, vegetarian fed chickens
2 cups of organic all purpose flour - I use only King Arthur’s Flour
1 tsp of baking powder - no aluminum
1 tsp of salt - I use sea salt
1 tsp of baking soda
2 cups of ripe mashed bananas
2 tblspns of vanilla
1/2 cup of banana liqueur
1 1/2 cups of milk chocolate toffee bits or favorite chips
Beat butter and sugar together until fluffy, add eggs one at a time, then stir in 1/4 cup of banana liqueur
Mash up bananas with the vanilla, fold into other wet ingredients
Mix dry ingredients together and fold into wet ingredients. Fold in toffee bits. Pour into a greased/floured pan. Pour remaining liqueur over the top of batter and bake for an hour and 1/2 on 300 degrees. Loaf is done when inserted knife comes out clean - may need to cook longer, depending on oven. Remove from oven, cool in pan on rack for 10 minutes - turn out on rack to cool completely.

The Historic Eureka Inn located on Main Street in the heart of Downtown Jonesborough, TN is the only historic hotel in Tennessee’s oldest town. In 1997 the Eureka Inn went through a $3million dollar restoration and was updated with modern amenities such as Wi-Fi. Each room includes it’s very own bathroom! There are 14 unique rooms, each decorated in the style of the 1800’s.
Maria Bledsoe, Daughter of former Mayor Tobie Bledsoe, is a 2nd Generation Innkeeper at the Historic Eureka Inn. The Inn is her home and she wants every guest to feel at home! On any given day when you enter the front door of the Inn..you’ll be hit by the scrumptious scent of freshly baked banana bread. She is always preparing freshly baked good for her guests, and her banana bread is a town favorite!
This year the Inn would like to promote their event facility, an outdoor garden and gazebo that can accommodate up to 125 guests. The Eureka Inn has wide open front and back porches that feature comfortable seating tailor-made for relaxation. Just off our back porches overlooking Little Limestone Creek we created a special landscaped private garden with a gazebo and brick patio. From weddings and reunions, to a quiet moment alone, our facility is a beautiful choice for any gathering.
We will be participating in the 2010 Historic Jonesborough Bridal Fair on February 20th by hosting an open house from 11am to 4pm. The town-wide festival will features wedding vendors from all over the region, and will provide couples with a great opportunity to come and experience the charm that Jonesborough, TN will add to their wedding.
However, the Eureka Inn is more than just a wedding venue! This year we are teaming up with Brandi Woodall of Positive Approach Events to put together events for the whole community. From wine gatherings and art, to live music in the courtyard, we will be working hard to create events for everyone in the area!
