Ingredients
Cookies:
3/4 cup shortening (plain Crisco)
1 cup packed brown sugar
1 egg
1/2 cup applesauce (or apple/pear sauce)
2 1/4 cups all-purpose flour, sifted
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/4 teaspoon cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon ground ginger
1 cup raisins (better if dusted in cinnamon)
Topping: (optional)
1/4 cup granulated sugar
1 teaspoon cinnamon
Instructions
1. Preheat oven to 375F.
2. To prepare cookies, combine shortening, brown sugar and egg; stir well. Stir in apple/pear sauce. Combine dry ingredients. Add to shortening mixture; stir well. Fold in raisins. Drop by tablespoons onto a greased baking sheet.
3. To prepare topping, combine sugar and cinnamon in a small bowl and sprinkle on cookies. Bake 11 mins. for applesauce (12 mins for apple/pear sauce). Makes 32 cookies.
